TOFU SCRAMBLE

INGREDIENTS

  • 1/4 red onion, diced

  • 1 clove garlic, crushed

  • 1/2 cup mushrooms, chopped

  • 1 cheek red capsicum, diced

  • 1/2 tsp turmeric powder

  • Black pepper

  • 1/3 block firm/slightly firm tofu

  • 1 large handful of chopped kale, washed

  • Your favourite sourdough or gluten free bread

  • Avocado

METHOD

  1. Place onion, garlic, capsicum and mushrooms into a fry pan with a little olive oil or water and sauté over medium heat for 5 minutes or until cooked.

  2. Using clean hands, take the tofu and crumble it into the pan.

  3. Add in the turmeric powder and black pepper and mix until turmeric is well combined and tofu is a golden yellow colour.

  4. Add the kale into the fry pan and stir through scramble mixture until wilted. Adding a little more water if necessary.

  5. Serve with your favourite toasted sourdough and avocado, and enjoy!
