SWEET POTATO BREAKFAST BOATS

INGREDIENTS
1 Japanese sweet potato (gold sweet potato also works)
1 scoop vegan protein powder
1 tsp cacao powder or matcha powder (optional but a great way to add different flavours/varieties)
1 tbsp ground flax/chia seed
Soy milk or plant milk of choice
TOPPINGS:
Fruit of choice
Walnuts
Peanut/almond butter
METHOD
Cut your sweet potato in half length wise and cook in the air fryer for 35 minutes at 170 degrees Celcius. (Note: cooking time will depend on the size of your potato. The smaller it is the faster it will cook).
While the sweet potato is cooking, in a small bowl, mix together the protein, cacao or matcha powder, and ground chia/flax with a little bit of soy milk until a thick pudding consistency is reached.
Prepare your fruit of choice.
Once the sweet potato is cooked, slice open and fill with your protein pudding mix, add your toppings of choice, and enjoy!
Tip:
* Pre roast your sweet potatoes at the start of the week to reduce the cooking time and turn this into a 5 minute breakfast!
