INGREDIENTS

  • 2 slices of sourdough bread (or preferred type of sturdy bread) - option to use GF bread

  • 1/2 cup soy milk (or plant milk of choice)

  • 1 heaped tsp ground flax/chia seeds

  • 1/2 tsp cinnamon

  • 1 scoop vegan protein powder

  • 1 tsp cacao (omit this if protein powder is already chocolate flavoured)

  • + extra soy milk

    TOPPINGS:

    • Plant-based yogurt

    • Protein mousse

    • Fresh fruit

    • Maple syrup

METHOD

  1. Start by mixing the soy milk, flax meal, and cinnamon in a large, shallow bowl. Place this in the fridge to rest for 10 minutes to allow the flax meal to thicken.

  2. While this mixture is resting, prepare your “protein mousse” by mixing your protein powder and optional cacao with extra soy milk in a small bowl until you reach a thick pudding/mousse consistency. Place this to the side.

  3. Warm a pan over medium heat and grease with a dash of olive or coconut oil.

  4. Dip each slice of bread in the milk mix for about 20 seconds on each side (add a splash of dairy-free milk if your mixture if too thick).

  5. Place on the pan and cook until golden brown on the underside. Carefully flip and repeat on the other side, approximately 3-4 minutes. Repeat with all slices of bread.

  6. Serve on a plate and top with the protein mousse, fresh fruit, and optional maple syrup!
