FIG & ALMOND TOASTED GRANOLA

INGREDIENTS
4 cups rolled oats
1 cup raw almonds
1/2 cup pepita seeds
2 tsp ground cinnamon
1/2-1 tsp cardamom powder
2/3 cup melted coconut oil
2/3 cup maple syrup
1/2 cup dried apricots, chopped
1/2 cup dried figs, chopped
1/2 cup coconut flakes
METHOD
Preheat the oven to 170 degrees Celcius and line a large baking tray with baking paper.
In a mixing bowl, combine the oats, almonds, pumpkin seeds, cinnamon, and cardamom. Stir to mix everything together.
Mix in the oil and maple syrup until everything is lightly coated.
Pour the granola onto your prepared pan and spread it in an even layer.
Bake for 15-20 minutes or until lightly golden.
Once golden brown, remove from the oven and let the granola sit undisturbed to cool completely (this creates the nice chunky crunchy bits!)
Once cooled, add in the dried fruit and coconut. If you prefer larger chunks of granola, gently break it apart with your hands. For a less clumpy texture, use a spoon to stir it.
Store the granola in an airtight container and enjoy!
