VEGAN PASTA MARINARA

INGREDIENTS

  • 200g Vetta protein spaghetti

  • 1/2 red onion, diced

  • 3 cloves garlic, crushed

  • 1 large zucchini, chopped

  • 300ml jarred pasta sauce

  • 1/2 cup water

  • Broccolini

  • Nutritional yeast

METHOD

  1. Cook pasta according to packet instructions. Protein pasta takes a little longer to cook hence why this step is first - if you are using regular pasta, you can cook your pasta at the end so it’s fresher/to avoid overcooking!

  2. While the pasta is cooking, in a large pan - fry the onion and garlic in a little water or olive oil until translucent and fragrant. Add in the zucchini and a little more water and allow this to cook and soften for a few minutes.

  3. Add in the pasta sauce and water and leave this to simmer over medium heat for 10-15 minutes, stirring regularly.

  4. While the sauce is simmering, steam your broccolini, and turn off heat once cooked.

  5. Once the pasta is ready, drain and rinse, and add into the pan along with the pasta sauce and zucchini and stir gently to combine.

  6. Serve with the steamed broccolini and optional nutritional yeast to top!
