PUMPKIN & TAHINI PASTA BOWL

INGREDIENTS
50g Vetta protein pasta or red lentil pasta
100g firm tofu, cubed
1 cup baked, cubed
1 cup broccoli heads, chopped
1 tbsp tahini
1/2 lemon, juiced
water
Fresh parsley, chopped
Salt & pepper
METHOD
Chop your pumpkin into cubes, place onto a lined tray and bake in the over for 20-30 minutes or until golden and soft.
Place your pasta and broccoli in a small pot and cover with boiling water and cook for 10 minutes or according to packet instructions.
While the pasta and broccoli are cooking, chop your tofu into cubes and cook these in the air fryer for 10 minutes at 200 degrees Celcius.
Next, in a small bowl mix together the tahini and lemon juice, adding the water little by little until desired consistency is reached.
Once the pasta and broccoli is cooked, strain and place into a bowl. Add your cooked pumpkin and tofu, and pour over the tahini dressing. Top with chopped parsley and salt and pepper and enjoy!
