CREAMY HUMMUS PASTA SALAD

INGREDIENTS
200g Vetta protein pasta or red lentil pasta
1 zucchini, sliced
2 cups pumpkin, cubed
2 cups rocket
4 tbsp nutritional yeast
4 tbsp hummus (homemade hummus recipe here)
Salt & pepper
METHOD
Place your chopped pumpkin and zucchini on a lined baking tray and bake is the oven for 20-30 minutes at 175 degrees Celcius or until soft and golden. You can also cook this in the air fryer to reduce cooking time.
While the vegetables are are cooking, place the pasta in a pot of boiling water and cook according to packet instructions.
When the pasta is ready, strain the water and place the pasta back in the pot. Mix in the cooked pumpkin, zucchini, rocket, and hummus.
Serve and enjoy straight away or place in the fridge to cool for later or for meal preps!
