THAI RED TOFU CURRY

INGREDIENTS

  • 1/2 onion, diced

  • 3 cloves garlic, crushed

  • 2 tsp red curry paste

  • 500g frozen Thai style vegetables

  • 450g firm tofu, cubed

  • 400ml light coconut milk

  • 1.5 cups water

  • Fresh coriander, chopped

  • Fresh lime, to serve

  • Cooked rice to serve

METHOD

  1. First place the cubed tofu into the air-fryer and bake at 200 degrees Celcius for 10 minutes. Alternatively, you can bake these in the oven or pan-fry the tofu until golden and crispy.

  2. While the tofu is cooking, begin cooking the curry. In a large saucepan or wok, sauté the onion, garlic, and curry paste in a little water (or olive oil), until translucent and fragrant.

  3. Next, add in the frozen veggies, coconut milk, and water and allow it to cook for 10-15 minutes until completely heated through and the vegetables are ready.

  4. Once the tofu is cooked, add this into the pan with the curry.

  5. If serving with rice, begin cooking your choice of rice while waiting for the curry to cook.

  6. Serve your curry in a bowl with rice of choice, and top with coriander and a squeeze of fresh lime - enjoy!
