SUMMER SATAY NOODLE SALAD

INGREDIENTS

  • 200g edamame noodles (dry)

  • 130g edamame, frozen

  • 1 carrot, peeled into ribbons

  • 1 cucumber, thinly sliced or diced

  • 100g red cabbage, chopped

  • 1 handful of chopped coriander

  • 1 handful of chopped fresh mint

  • 2 tbsp natural peanut butter

  • 2 tbsp tamari sauce

  • 1/2 tsp each of onion and garlic powder

  • 1 lime, juiced

  • Salt & pepper

METHOD

  1. Place the noodles and edamame beans in a pot and cover with boiling water. Allow to cook over medium/high heat for 5 minutes until cooked.

  2. While the edamame and noodles are cooking, prepare the satay sauce by mixing together the peanut butter, tamari, onion and garlic powder, and lime juice in a small bowl. Adding water little by little until a pourable sauce consistency is reached.

  3. Drain the noodles once cooked and place into a large bowl.

  4. Add in the fresh carrot, cucumber, cabbage, coriander and mint.

  5. Pour over the satay sauce and mix until everything is well combined.

  6. Serve straight away or leave to chill in the fridge for a few hours until cooled and enjoy as a cold noodle salad!
