10-MINUTE SATAY NOODLE SALAD

INGREDIENTS

  • 170g vermicelli cooked rice noodles (~60g dry noodles)

  • 1 cup broccoli, chopped into florets

  • 1/2 carrot, thinly sliced

  • 1 cheek of red capsicum, sliced

  • 100g tofu, cubed

  • 1 tbsp natural peanut butter

  • 1 tbsp tamari sauce

  • 1/2 lime, juiced

  • 1/2 tsp each onion and garlic powder

  • Fresh coriander, chopped

METHOD

  1. First, bake your tofu in the air fryer at 200 degrees Celcius for 10 minutes, or until golden and crispy. Alternatively, you can also pan fry the tofu.

  2. While the tofu is baking, steam the broccoli, carrot, and capsicum.

  3. Place the rice noodles in a bowl and cover with boiling water and allow to sit for 2 minutes, then drain.

  4. Finally, make the satay sauce. In a small bowl, place the peanut butter, tamari sauce, lime juice, onion and garlic powder and mix until well combined. Adding water little by little until desired consistency is reached.

  5. Assemble the rice noodles, steamed vegetables, and tofu into a bowl Top with the satay sauce and fresh chopped coriander - enjoy!
