INGREDIENTS
100g soft tofu*
1 tsp curry powder
1 tsp dijon mustard
Salt & pepper
2 x slices of bread of choice
Lettuce
METHOD
Using a fork, mix together the tofu, curry powder, mustard, and salt & pepper until a homogenous “egg” mixture is reached.
Assemble the curried egg mixture and lettuce on your bread of choice. Cut in half and enjoy!
*Soft tofu is firmer than silken tofu, but softer than firm tofu and will be labelled as “soft tofu”. Using a soft tofu rather than firm is key for this recipe to get the right consistency!
