CURRIED TOFU EGG & SALAD SANDWICH

INGREDIENTS

  • 100g soft tofu*

  • 1 tsp curry powder

  • 1 tsp dijon mustard

  • Salt & pepper

  • 2 x slices of bread of choice

  • Lettuce

METHOD

  1. Using a fork, mix together the tofu, curry powder, mustard, and salt & pepper until a homogenous “egg” mixture is reached.

  2. Assemble the curried egg mixture and lettuce on your bread of choice. Cut in half and enjoy!

*Soft tofu is firmer than silken tofu, but softer than firm tofu and will be labelled as “soft tofu”. Using a soft tofu rather than firm is key for this recipe to get the right consistency!
