CHICKPEA BLONDIES

INGREDIENTS

  • 1 can chickpeas

  • 2 tsp baking powder

  • 1/3 cup granulated sugar of choice

  • 2/3 oat cup flour

  • 1 mashed banana* or 1/3 cup apple sauce

  • 1/3 cup almond or peanut butter

  • 1/3 cup oat milk

  • 1 block vegan chocolate, chopped or 1/2 cup chocolate chips

    *It’s important to use ripe and spotty bananas for this recipe as the starch is broken down into sugars during the ripening process, providing more sweetness!

METHOD

  1. Preheat oven to 175 degrees Celcius.

  2. Place all of the ingredients except the chocolate into a high speed blender and blend until smooth.

  3. Fold in chocolate chips.

  4. Pour blended mixture into a banana bread tin lined with baking paper and top with extra chocolate chips.

  5. Bake for 35 minutes or until golden on top.

  6. Leave to cool before slicing. Best consumed once completely cooled for best flavour! Store in an airtight container in the fridge.
