OVERNIGHT TIRAMISU WEETBIX

SERVES 1 | TAKES 10 MINUTES (+ SIT TIME OVERNIGHT)

  • This recipe is perfect for breakfast or dessert - its sweet, creamy, and most of all, full of nourishing ingredients for your body. Coffee is naturally high in antioxidants such as chlorogenic acid and polyphenols which help protect your cells from damage and reduce inflammation in the body. For hormone health, it’s best to not have coffee on an empty stomach - by pairing it with a source of protein such as the silken tofu and protein powder, this will help to blunt the cortisol spike and stabilise blood sugar levels, while also helping you feel satiated for longer. Bananas are a natural source of potassium essential for muscle and nerve function, while the ground flaxseed are rich in omega 3 fatty acids - essential for reducing inflammation in the body and promoting brain health!

INGREDIENTS

  • 2 weetbix

  • 1 tsp instant coffee dissolved in 1/4 cup of water

  • 1 scoop vanilla vegan protein powder

  • 1 tbsp flaxseed meal

  • 1 tbsp cacao powder

  • 1 cup soy milk (or plant milk of choice)

    To top:

    • Plant-based yogurt

    • Sliced banana

    • Cacao powder

METHOD

  1. Crush the weetbix into a jar, bowl, or fancy cup of choice and add in the protein powder, flaxseed, cacao powder.

  2. Add in the coffee mixture and soy milk and stir until well-combined.

  3. Leave to sit in the fridge overnight or 3-4 hours until chilled.

  4. Top with sliced bananas, plant-based yogurt, and a dusting of cacao powder and enjoy!
