MATCHA CHIA OVERNIGHT OATS

SERVES 1 | TAKES 10 MINUTES (+ OVERNIGHT SETTING)

INGREDIENTS

  • 1/3 cup quick oats

  • 1 tbsp chia seeds

  • 1 tsp matcha powder

  • 2/3 - 3/4 cup plant-based milk

  • 1 ripe banana

  • 1/2 tsp cinnamon powder

  • 1/2 cup frozen blueberries, defrosted

  • 1 scoop vanilla plant-protein powder of choice

METHOD

  1. Blend the milk, matcha, cinnamon, and banana in a blender until smooth.

  2. Place the oats and chia seeds into a jar or glass, a pour over the blended matcha milk and mix until everything is combined. Place in the fridge to set overnight.

  3. The next morning, in a small bowl mix the protein powder with a splash of plant milk and continue to mix until a smooth cream-like texture is reached, adding in the milk little by little.

  4. Layer the defrosted blueberries, then the protein mousse mix over the top of the set base.

  5. Top with a dusting of matcha, and enjoy!
