MATCHA CHIA OVERNIGHT OATS

INGREDIENTS
1/3 cup quick oats
1 tbsp chia seeds
1 tsp matcha powder
2/3 - 3/4 cup plant-based milk
1 ripe banana
1/2 tsp cinnamon powder
1/2 cup frozen blueberries, defrosted
1 scoop vanilla plant-protein powder of choice
METHOD
Blend the milk, matcha, cinnamon, and banana in a blender until smooth.
Place the oats and chia seeds into a jar or glass, a pour over the blended matcha milk and mix until everything is combined. Place in the fridge to set overnight.
The next morning, in a small bowl mix the protein powder with a splash of plant milk and continue to mix until a smooth cream-like texture is reached, adding in the milk little by little.
Layer the defrosted blueberries, then the protein mousse mix over the top of the set base.
Top with a dusting of matcha, and enjoy!
