INGREDIENTS
2 nori sheets, cut or ripped into squares
1/4 cup dry quinoa or rice, rinsed
100g firm tofu (usually around 1/3 of a block), cubed
1/2 avocado, diced
1 Lebanese cucumber, chopped
1 tbsp healthy vegan mayo
Tamari sauce for topping
METHOD
Place the rinsed quinoa or rice in a small pot and cover with 1/2 cup boiling water. Leave to cook for 10-15 minutes, stirring occasionally, until water has evaporated.
While the quinoa is cooking, prepare your tofu using your preferred cooking method. I prefer to have mine fresh (uncooked) for this dish, however pan frying also works!
Once the quinoa and tofu is cooked, assemble all the ingredients into a bowl, top with vegan mayo and tamari sauce!
