INGREDIENTS

  • 2 slices of your favourite bread (toasted or untoasted)

  • 100 grams of firm tofu or tempeh, sliced

  • 1/2 carrot, grated

  • 1/2 tomato, sliced

  • Alfalfa sprouts

  • Mixed lettuce

  • 2 tbsp peanut butter

METHOD

  1. If using tempeh, start by cooking this either in the air fryer for 10 minutes at 180 degrees or simply pan frying. If using firm tofu, this can be eaten straight from the packet as is, or you can choose to pan fry this as well.

  2. Once this is ready, toast your bread if preferred, otherwise use fresh.

  3. Assemble your sandwich starting by spreading the peanut butter across one slice and layering the other ingredients on top.

  4. Close your sandwich, cut in half and enjoy!
