LENTIL DAHL

INGREDIENTS

  • 1-2 tbsp sesame oil

  • 1 red onion, diced

  • 2 cloves garlic, crushed

  • 1 bunch coriander, chopped (stalks included)

  • 3 tsp curry powder

  • 1cm piece each fresh turmeric and ginger, grated (optional, but recommended)

  • Crack of black pepper

  • Veggies of choice, chopped (e.g. carrots, zucchini, pumpkin, sweet potato), roughly 2 cups worth

  • 2 cups red split lentils, rinsed

  • 5 cups water (or half and half water/vegetable stock)

METHOD

  1. Sauté onion, garlic, coriander, curry powder, fresh ginger, and turmeric in a large pot in the sesame oil for a few minutes until onions are translucent and fragrant.

  2. Add in the rest of the ingredients and cook on medium heat for 30-40 minutes, stirring throughout.

  3. Top with extra coriander and enjoy with a healthy source of carbohydrates such as rice. If you want to boost the protein you can also serve with some crispy tofu on top!
