CREAMY GREENS PROTEIN PASTA

INGREDIENTS

  • 170g (dry) Vetta protein pasta (or alternatively use a pulse pasta if gluten free)

  • 200g silken tofu

  • 3 cloves garlic

  • 40g (1 cup) baby spinach

  • 1/2 cup nutritional yeast

  • 1/2 avocado

  • 1tsp onion powder

  • S + P

  • 1/4 cup water

  • Optional add ins to serve: roast pumpkin and broccoli, and smoked paprika.

METHOD

  1. First, cook the pasta according to packet instructions (if you are serving with broccoli, you can also place this is the pot to allow to cook at the same time as the pasta.

  2. While the pasta is cooking, roast the cloves of garlic using an air fryer or oven.

  3. Next, in a high powder blender, blend the tofu, roasted garlic, spinach, nutritional yeast, avocado, onion powder, salt, pepper, and water, until smooth.

  4. Drain the cooked pasta and place in back into the pot.

  5. Stir in the blended sauce mixture until the pasta is evenly coated. Mix in any optional extras you want to serve with. Top with a sprinkle or smoked paprika and more nutritional yeast - and enjoy!
