BLUEBERRY BURGER BOWL

INGREDIENTS

  • 1 serve of Vegan Burger Patties (2 patties)

  • 1/4 cup quinoa, rinsed

  • 1 cup kale, washed and roughly chopped

  • 1/2 avocado

  • 1/2 cup fresh blueberries, washed

  • Salt & pepper

METHOD

  1. First, cook the quinoa according to packet instructions.

  2. While the quinoa is cooking, if not already prepared, cook your burger patties according to the recipe provided.

  3. Once the patties and quinoa are cooked, place the kale into a small bowl and lightly steam by pouring boiling water over the top and allowing this to sit for 2-3 minutes until the kale is soft before draining the water. Alternatively, you can stir the kale into the quinoa mix once cooked and allow it to wilt with the heat.

  4. Assemble the quinoa, kale, and burger patties into a bowl. Top with the avocado, blueberries, salt & pepper, and enjoy!
