INGREDIENTS

  • 1-2 tbsp buckwheat flour (regular flour also works if you aren't gluten free)

  • 2 heaped tbsp vegan protein powder

  • 1 tbsp cacao powder

  • 1/2 ripe banana, mashed

  • 2/3 cup soy milk (I use Vitasoy unsweetened protein plus)

  • 1 tbsp peanut butter

  • Fresh/frozen berries

    Other topping ideas

    • Plant-based yogurt

METHOD

  1. Place all cake ingredients in a mug and mix together until well combined and you have a cake mixture consistency.

  2. Microwave for 3 minutes.

  3. Top with berries and peanut butter (or any of your favourites) and enjoy!
