This breakfast is perfectly balanced to keep you feeling full for hours and is rich in fibre to feed your gut microbiome. Sweet potato provides a source of complex carbohydrates which gives your body a slow release of energy to keep your blood sugar levels balanced. Protein powder provides the protein required to repair and grow muscle and contribute to collagen production. Walnuts provide a source of healthy omega 3 fatty acids which are vital for brain function, reducing inflammation, and promoting skin health where they help to support the skin barrier.
INGREDIENTS
1/2 Japanese sweet potato (gold sweet potato also works)
1 scoop vegan protein powder
Optional additions: cacao powder or matcha powder (to add different flavours/varieties)
Plant milk of choice
TOPPINGS:
Fruit of choice
Walnuts
Cacao nibs
Nut butter
METHOD
Cut your sweet potato in half length wise and either steam first to reduce cooking time, and then cook in the air fryer for 20 minutes at 160 degrees Celcius. Alternately you can skip the steaming step and cook for longer in the air-fryer until soft. (Note: cooking time will depend on the size of your potato. The smaller it is the faster it will cook).
Once the sweet potato is ready, in a small bowl, mix together the protein, cacao or matcha powder, and ground chia/flax with a little bit of soy milk until a thick pudding consistency is reached.
Prepare your fruit of choice.
Once the sweet potato is cooked, slice open and fill with your protein pudding mix, add your toppings of choice, and enjoy!
Tip:
* Pre roast your sweet potatoes at the start of the week to reduce the cooking time and turn this into a 5 minute breakfast!
