This high fibre pesto sauce is delicious, full of flavour, and incredibly nutritious. Pasta provides a source of carbohydrates for energy, while the tofu ricotta acts as your source of protein. For an extra boost you can swap out the regular pasta for a protein pasta, or if you’re gluten-free swap it for your favourite gluten free alternative! Adding walnuts to the top provides a source of healthy fats - specifically omega 3 fatty acids which are vital for brain and skin health.
INGREDIENTS
Pasta of choice
1 cup peas
1 cup basil
Handful of spinach
2 cloves garlic
1/2 lemon, juiced
1/2 cup nutritional yeast
Salt & pepper
Walnuts to top
Tofu ricotta (1 serve - scale as needed)
100g firm tofu
3tbsp nutritional yeast
Salt & pepper
METHOD
First, cook your pasta according to packet instructions.
While the pasta is cooking, blend the peas, basil, spinach, garlic, lemon, nutritional yeast, and salt and pepper until smooth.
Once your pasta is cooked, drain and mix in the green pesto sauce until well combined.
Next make the tofu ricotta by placing all of the tofu ricotta ingredients into a small bowl, and using a hand/immersion blender to blend until a smooth/whipped consistency is reached.
Plate up your desired amount of pasta, and top with one serve of the tofu ricotta, walnuts & freshly chopped basil - enjoy!
