This is one of my favourite meal prep lunches! It’s full of fibre and protein from the pulse pasta to feed your gut microbiome, promote muscle growth, and blood sugar levels stable. The creamy dressing made from blended herbs, silken tofu, and avocado provides your body with healthy fats and vitamin E important for promoting hormone health and glowing skin! Lastly the coriander and parsley is rich in chemical compounds that bind to toxic metals and loosening them for easier transport out of the body.
INGREDIENTS
Rocket
2 cups pumpkin, cubed
1 punnet of cherry tomatoes, halved (sometimes I will replace this with roast capsicum)
1 cucumber
Olives
1 batch of Detox Dressing
1 packet (250g) of Pulse Pasta (I love San Remo if you are in Australia)
METHOD
First, steam the pumpkin until slightly soft and then bake in your air fryer or oven at 170 degrees Celcius for 20 minutes until lightly golden.
While the pumpkin is cooking, start by making the detox dressing.
Next cook the pasta according to packet instructions.
While the pasta is cooking, chop the tomatoes and cucumber.
Once the pasta is finished cooking, drain and rinse under cold water.
Place the pasta, pumpkin, tomatoes, cucumber, olives, and rocket into a large bowl. Pour over the detox dressing and mix until well combined.
Enjoy either immediately or place into the fridge to enjoy cool later or into containers for the perfect meal prepped lunches for the week!
