INGREDIENTS
1/2 cup dry sticky/sushi rice
2/3 coconut milk
60g vanilla protein powder
1 tsp vanilla extract (optional, but recommended)
Extra water as needed
1 mango, sliced
METHOD
Cook the rice according to packet instructions.
Once cooked, turn off the heat and stir in the coconut milk and protein powder, adding extra water as necessary until protein powder is well combined.
Serve with sliced mango and an extra drizzle of coconut milk - enjoy!
